One of the girls’ friends is gluten free and I’m always on the hunt for baking recipes that I can make whenever a playdate has been organised.
These five ingredient almond cookies are incredibly easy to make. And when I say that they’re incredibly easy to make. I mean, they’re incredibly easy to make.
Made using sugar, eggs, almond extract, salt and almond meal – they’re thrown together in minutes and can be ready from start to finish in as little as 20 minutes. Perfect for when you’re in a bit of a hurry and need a sweet treat to enjoy with a hot cup of tea.

A fun one for the kiddies to get involved in as well. You honestly couldn’t get anything simpler.

Yes they look pretty plain as they come out of the oven. Nothing that a little sprinkling of icing sugar can’t fix.


gluten free almond cookies
(makes 24 cookies)
Thank you to The Mindful Meringue for the recipe which I’ve adapted ever so slightly.
1 1/4 cups of white sugar
2 x large eggs
1 x teaspoon of almond extract
A good pinch of salt
3 1/4 cups of almond meal
Icing sugar, for dusting
- Preheat the oven to 180℃ and line three baking trays with baking paper.
- Add the sugar, eggs, almond extract and salt and mix to combine.
- Add the almond meal and stir – starting with a wooden spoon and then getting in with your hands until you have a nice pliable dough.
- Using an ice cream scoop, scoop the mixture out into even size balls and place on to the prepared trays, leaving room between each cookie.
- Cook for 12 minutes (or until ever so slightly browned on the outside).
- Leave on the trays to cool.
- Once completely cooled, dust with icing sugar.
Suggestion: You can decorate these cookies by pressing in a blanched almond in the centre before baking if you like.
