cheat’s pizza | prawn + hummus + spinach & bacon + tomato + capsicum

We all need some quick and easy ‘go to’ meals for busy weeknights.

One of mine is making Lebanese bread pizza’s. I buy the wholemeal kind (there are always some on standby in my freezer) and I scatter loads of green, leafy baby spinach or rocket on top (to make it feel a little healthier than your Domino’s equivalent).

They are so quick and easy to make and you can literally use up anything that is leftover in the fridge. I have given you two recipes below, but go for your life. See what combo’s you can create. The base is so thin and crispy when cooked and they are the perfect, affordable form of a Friday night ‘takeaway’ if you are looking to save a few pennies.

prawn, hummus + spinach cheats pizza

1 wholemeal Lebanese bread
1 tablespoon of tomato paste
2 tablespoons of hummus
Handful of frozen cooked prawns
Handful of grated mozzarella cheese (tasty cheese is fine too)
Few slices of a Spanish onion, diced
Chilli flakes, to taste
Lemon wedges, to serve
Baby spinach, shredded, to serve

  • Preheat the oven to 180 degrees.
  • Spread the tomato paste over the Lebanese bread.
  • Spread the hummus over the top.
  • Scatter the onions, prawns and chilli flakes over the top.
  • Top with cheese.
  • Bake for 20 minutes or until cooked.
  • Scatter the shredded spinach leaves over the top and serve hot with a wedge of lemon.

bacon + tomato + capsicum cheats pizza

1 wholemeal Lebanese bread
1 tablespoon of tomato paste
2 rashers of bacon, very finely sliced
1/4 of a red capsicum
1 anchovy fillet, torn (optional)
5 cherry tomatoes, cut in half
Small handful of sun dried tomato strips
Handful of grated mozzarella cheese (tasty cheese is fine too)
Rocket leaves, to serve

  • Preheat the oven to 180 degrees.
  • Spread the tomato paste over the Lebanese bread.
  • Scatter the bacon, capsicum, tomatoes, sun dried tomatoes and anchovy (if using) over the top.
  • Top with cheese.
  • Bake for 20 minutes or until cooked.
  • Scatter the rocket leaves over the top and serve hot.

Lo’s tips
You can substitute the ingredients above with any of the following; shredded leftover bbq chicken, mushrooms, olives, salami, tinned artichoke hearts or very finely sliced zucchini.
