brown sugar loaf cake

The twinnies woke at 5 this morning. I’m on to my second cup of coffee and while they play with the dishwasher tablets in the cupboard under my feet, I’m throwing a brown sugar loaf cake (my new favourite recipe) into the oven. Mother’s of twins all need a piece of cake when this sleep deprived. Actually, what am I saying – ALL mothers need a piece of cake full stop.

A lovely cake to enjoy with a hot cuppa.
I love sprinkling some coconut over the top, but the girls prefer sprinkles. Always sprinkles.

You’ll need a small loaf tin for this recipe. Failing that, I’m sure you could use a small round cake tin instead.

3 x eggs
1/3 cup of milk
1 x teaspoon of vanilla extract
3/4 cup of brown sugar (tightly packed)
1 1/4 cups of plain flour
1 x good teaspoon of baking powder
A good pinch of salt
175 grams of butter, at room temperature, cut into small chunks

  • Preheat the oven to 170 degrees (mine is fan forced) and line a loaf pan with baking paper and canola oil spray.
  • Add the eggs, milk and vanilla to a small bowl or jug and whisk together with a fork. Set aside.
  • In the large bowl of a stand mixer, add the sugar, flour, baking powder and salt and mix on low until just combined.
  • With the mixer going on a low speed, add the butter and milk mixture alternatively until all is incorporated and mix well, (scraping down the sides of the bowl if need be to ensure an even mix).
  • Pour into the prepared pan and bake for approximately 40 minutes or until cooked.
  • Let cool on a wire rack and then slather buttercream icing over the top.

  2. cooked this in the air fryer today, turned out pretty well but due to proximity to the cooker the top was mildly overdone but the taste was perfect. Matched the cooking time for the oven and seemed to work quite well, highly recommend to try- oven broke so trying recipes for the airfryer
