charlotte’s chocolate cupcakes

You’ve heard of the saying “the dog ate my homework”. In this case, it’s more like “the dog ate my cupcakes”. Blue Dog ate the entire tray of Charlotte’s chocolate cupcakes! Blue. Dog! Oh, and it gets worse. Not only did he pinch the cupcakes, but also gone was a whole loaf of freshly baked banana bread from right off the kitchen table; happening last night while we were outside feeding the chooks. I think I was in shock.

Oh well. I guess, “you win some, you lose some”, I say as I switch the oven back on…

I really can’t believe it’s taken me this long to share this cupcake recipe with you – it’s the only cupcake recipe you’ll ever need. Absolutely perfect for getting the kids in the kitchen cooking and just what you want when you have a birthday party looming (Happy Birthday Lizard).

The baking powder helps keep them really light and fluffy and they’re so easy to make – simply chucking everything in to a bowl before going to town with the hand mixer. Decorate them however you like too; think chocolate icing and sprinkles, fresh berries and whipped cream or throw some little tiny teddies on top. Simple, easy, delicious.

charlotte’s chocolate cupcakes

3/4 cup of plain flour
2 x teaspoons of baking powder
1/2 cup of sugar
1/4 cup of cocoa
1 x teaspoon vanilla extract
80 grams butter (melted in the microwave)
2 x eggs
1/2 cup of milk

chocolate icing* + sprinkles, to serve

makes 12

  • Preheat the oven to 160℃ and line a 12 cup capacity muffin tin with cupcake wrappers.
  • Simply add all ingredients to a mixing bowl and mix together well using hand beaters (or a stand mixer).
  • Spoon the batter in to the prepared tray and bake for approximately 12-15 minutes or until they’re cooked through.
  • Allow to cool on a wire rack before icing and decorating.

*to make the chocolate icing: simply add about 50 grams of softened butter to a small bowl and mix well with a fork. Add just under a cup of icing sugar and a tablespoon of cocoa and continue to combine. Dribble in a little milk as you go until you have a nice smooth consistency.
