This dish is inspired by a lovely dessert Mim used to make using homegrown peaches and oranges from her trees on the farm. She used to cover the freshly picked peaches with a sprinkling of sugar, some freshly squeezed orange juice and a generous amount of Cointreau. Oh my gosh- talk about heaven on a plate.
Since I’m not lucky enough to have any home grown peaches, I’ve used strawberries instead and have teamed them with some lovely raspberry liquor Mum gave me for Christmas. Served with a scoop of vanilla ice cream- it’s the nicest dessert you can have and is made in the blink of an eye.
A bit of a special treat for when you have friends over or simply just because you feel like it. Often it’s the simplest things that are the best.
And this is definitely simplicity at its best.
strawberries + ice cream (serves 4)
1 x punnet of strawberries, washed and quartered
1 x teaspoon of castor sugar
1/2 cup of raspberry or strawberry liquor
Vanilla ice cream, to serve
- Pour the sugar and liquor over the strawberries and leave for at least an hour. (Do this whilst you’re cooking dinner).
- Serve the strawberries with a scoop of vanilla ice cream, drizzling the liquid over the top.
- Any berries would work well here.
- If you don’t have any raspberry liquor, you can use triple sec instead.
