lo’s kitchen salad dressing

In the recent remake of Beatrix Potter’s masterpiece, Peter Rabbit, Peter’s rather plump sidekick, Benjamin Bunny is told to lose weight by taking his salad with the dressing on the side. Benjamin is a bit like me as he doesn’t quite get it. “I don’t understand how I am to lose weight when I drink the entire dressing in one go?”

My sister, Elle is a great cook and makes some delicious and beautifully crafted salads. She has always been a believer in making sure that there is one thing about a salad that causes you to REALLY want to eat it. One cheat ingredient to make it worth your while,  such as some pomegranate seeds, crispy fried haloumi, sizzling hot bacon pieces, homemade crunchy croutons or some really nice salad dressing.

A nice salad dressing really does turn a simple green salad consisting of lettuce, cucumbers, tomatoes and Spanish onion in to something a little bit special. I made this dressing when Aunty Ali was here and she loved the addition of the wholegrain mustard. I also make it with Dijon as well.

This batch of Lo’s Kitchen salad dressing is made better by these lovely jars that were left over from my cousins wedding, where my Aunty Jen made her famous lemon cordial as a bonbonniere for all of the guests.

lo’s kitchen salad dressing (makes enough for 1 x big leafy green salad)

4 x tablespoons of a good quality olive oil
2 x tablespoons of red wine vinegar
1 clove of garlic, crushed
Juice of 1/2 a lemon
Salt and freshly cracked pepper
1 x teaspoon of wholegrain mustard
1 x teaspoon of castor sugar
A light sprinkling of chilli flakes

  • Simply add all ingredients in to a jar, tasting as you go, and shake well.

Lo’s tips

  • Shake well before use.
  • You can double or triple the recipe and make a large batch of salad dressing at once. I make it and keep it in the fridge until needed.
  • A bottle of salad dressing is also a really nice gift.
  • You can substitute the wholegrain mustard with some Dijon mustard if you like.
