vanilla magic slice

This has all the components of a very good slice. A beautifully chewy and crunchy texture, a sweet and salty flavour and the loveliest hint of vanilla. I made this for my mother-in-law yesterday and she asked for the recipe, instantly.

When Heilala Vanilla reached out to me to see if I’d be interested in receiving a PR gift on the launch of their new products (natural vanilla extract and vanilla bean paste) into Coles Supermarkets, I said yes because I’ve long seen Heilala used on various cooking shows and have always wanted to try it.

And boy oh boy. This is what real vanilla tastes like! Showcased beautifully in this absolute ripper of a slice recipe, make it to enjoy with a hot cuppa this weekend, to pop into lunchboxes for a special treat or to eat with a scoop of vanilla ice cream and some fresh strawberries for a lover-ly dessert this Father’s Day.

vanilla magic slice

Makes a lovely big slab of slice which can be cut into approximately 24 pieces, depending on how big you want to make them.

This recipe was given to me by the masters in all things vanilla, Heilala.

ingredients

base

200 grams of malted milk biscuits
150 grams of white chocolate
2 x tablespoons of sweetened condensed milk (taken from the can below)
2 x teaspoons of Heilala natural vanilla extract

topping

remainder of 1 x 395 gram can of sweetened condensed milk
2 x teaspoons of Heilala vanilla bean paste
80 grams of desiccated coconut
75 grams of slivered almonds
A sprinkling of Heilala vanilla salt, to finish

  • Preheat the oven to 160℃ fan forced and line a slice tin (27cm x 18cm) with baking paper, leaving an overhang.
  • Crush the biscuits using a rolling pin until you have fine crumbs and place in a large mixing bowl.
  • Add the chocolate to a microwave safe bowl and heat on high for one minute or until just melted. Stir to ensure that it’s all melted nicely.
  • Pour this chocolate into the biscuit crumbs and add two tablespoons of condensed milk and the Heilala natural vanilla extract. Stir.
  • Press into the prepared tin and set aside.
  • Meanwhile, stir the remaining condensed milk and Heilala vanilla bean paste together.
  • Sprinkle the coconut and almonds evenly over the base, then slowly pour over the vanilla condensed milk mixture, spreading it out evenly to the edges.
  • Bake for 25-30 minutes or until golden around the edges and just set in the centre.
  • Sprinkle with some Heilala vanilla salt and let cool in the tin before cutting into squares to serve.
  • Keeps well in an airtight container.
