What do you usually cook on the barbie? Snags? Rissoles? A piece of steak? Occasionally we’ll do a butterflied leg of lamb or I’ll make my own kebabs. I’ve recently stumbled across this Greek marinated chicken recipe though. It’s seriously the easiest thing in the world to make and will be on rotation in our house from now on.
Simply whack the marinade ingredients in with some chicken thighs and pop in the fridge overnight. Then all you need to do is palm the cooking off to someone willing once your friends arrive.
Along with the usual sausages on bread for the kiddies, we grilled some chicken on our outdoor paella pan, teaming it up with some delicious maple glazed roast pumpkin, potato bake and a simple Greek salad recently when friends were over.
Such a lovely little menu to whip up next time you’ve got company.



marinated greek chicken
The marinade’s made up of natural yoghurt, lemon juice, garlic, oregano, olive oil, vinegar and some salt and pepper. All easy ingredients that I have on hand and go for boneless chicken thighs or alternatively, you could use chicken breast instead.
1 x kilo of boneless chicken thighs
1 x cup of natural yoghurt
The juice of 1 x lemon
A really good couple of glugs of olive oil
4 x crushed garlic cloves
A good sprinkling of dried oregano
A splash of white vinegar
A really good seasoning of salt and freshly cracked pepper
- Simply add all marinade ingredients to a small bowl and mix together.
- Pour over the chicken, cover in plastic wrap and pop in the fridge to marinate overnight.
- Grill on the barbie or in a non stick fry pan until really nicely cooked and caramelised.
Enjoy with a Greek salad and potato bake.
