chicken, veggie + feta slice

This recipe is so good for so many reasons. It’s a great way to use up a leftover barbecue chook. It’s a great meal to make ahead of time to reheat when you have guests coming over. It’s healthy, fast, delicious and simple. Perfect for a weeknight dinner or to have in the fridge for an easy lunch. Just the type of cooking I like.

Inspired by a family favourite of ours – the humble zucchini slice, you simply throw all ingredients into a mixing bowl, mix with a wooden spoon and then whack into a baking dish and bake.

This is a brilliant dish as you can use whatever leftover veggies you may have in your fridge. Add finely diced red capsicum and/or broccoli or tinned corn if you like. This dish can be eaten straight away, or kept in the fridge for lunch the next day. It also freezes really well and makes for terrific toddler finger food.

2 x large zucchinis, grated
2 x large carrots, peeled and grated
1/4 of a cauliflower, finely chopped
A good handful of baby spinach leaves
1 x brown onion, finely chopped
5 x large eggs (use 6 if they’re on the small side)
1 x cup of self raising flour
1/2 a cup of vegetable or canola oil (or you could use olive oil)
3/4 cup of grated tasty cheese
100 grams of feta cheese, crumbled
A handful of leftover bbq chicken, chopped (failing that, you can use bacon or ham instead, or if you want this dish to be vegetarian – leave it out altogether)
Parsley, use fresh if you have it, finely chopped, or failing that, go for some dried parsley
A sprinkling of cayenne pepper (leave this out if you like)
Salt and freshly cracked pepper

  • Preheat the oven to 180 degrees fan forced and spray a large shallow casserole dish with canola oil spray and set aside.
  • Simply add all ingredients into a large mixing bowl and stir well with a wooden spoon.
  • Scrape the mixture into the prepared dish and bake in the oven for approximately 30 minutes or until the slice has set nicely and has a nicely golden top.
  • Serve with a fresh garden salad and some sweet chilli sauce.
