Meemar’s famous coconut slice. I’ve lost count of the number of times I’ve watched Mum make this over the years. It’s a terrific morning or afternoon tea option with a steaming hot cuppa. Why not make the slice this weekend and invite some friends “around for tea”? Sounds very Downton Abbey doesn’t it? Either that or very Hugh Grant in Notting Hill.
My sister Ali loves it when I post Mum’s recipes. It’s good, she says, because it means that she can look them up online instead of having to call Mum AGAIN to ask for the same recipes over and over. I’m totally guilty of doing that too.
It’s a fabulous recipe because all of the ingredients are generally in the house already and it takes under 30 minutes to whip up from start to finish. You also don’t need to get the mix master out – the wooden spoon does all the hard work for you. Perfect to make with your littlies.
And drink tea. “There’s lots of tea”.
mum’s coconut slice
125 grams of butter, melted (I melt it in the microwave)
3/4 cup of sugar
2 x eggs
1/2 cup of milk
1 x cup of self raising flour
1 x cup of desiccated coconut
Pinch of salt
lemon icing
1 1/3 cups of icing sugar
1 x tablespoon of softened butter
1 x squeeze of lemon juice
Boiling water, a couple of drops
Extra desiccated coconut, to sprinkle over the top*
- Place the melted butter and sugar in a mixing bowl and mix together using a wooden spoon.
- Add the eggs and milk, continue to stir.
- Add the remaining dry ingredients and mix until combined.
- Pour the batter in to a very well greased lamington tray (or line the tray with baking paper) and bake in a moderate oven (180℃) for 18 minutes or until slightly browned on top.
- Leave the slice to cool still in the tray.
- Once completely cooled, spread the icing over the top and sprinkle with coconut straight away (the coconut will stick to the wet icing).
- Then, cut in to squares and taking pieces out individually and arrange on a platter.
Lo’s tips
- *NB I’ve sprinkled shredded coconut over the top of this slice (pictured) as I had run out of desiccated coconut. Desiccated coconut is finer and works better.
- This slice freezes really well un-iced.

Hi Julia, I’ve actually never used coconut flour but Mum says that she loves this recipe because she substitutes the regular flour with gluten free flour when making it for a couple of her friends who are gluten intolerant. I want to say give it a try!
