easy peasy apple cake | simple + tasty + homely

I had a little helper in the kitchen this arvo. ‘Annabelle darling’ helped every step of the way; licking the bowl completely clean, arranging the apples on top of the cake and sprinkling the brown sugar over everything, all while happily chomping on pieces of apples as we went. She said it looked like a “muffin cake” when it came out of the oven. It’s amazing how observant two year olds can be.

This is the type of cooking I love. Simple, tasty and homely. There’s nothing fancy here and once you’ve made this once, you’ll be able to do it with your eyes closed for many years to come. It’s the same base cake mix as my easy orange cake, replacing the oranges with apples and adding cinnamon. It’s also such an easy cake because you don’t need to bother with making icing and I always have all of the ingredients at home.

The ultimate afternoon tea cake, invite some friends round for a cuppa and let your inner domestic goddess out of the closet.

Easy peasy.

easy peasy apple cake

150 grams of butter, softened
2/3 cup of castor sugar
3 x eggs
1 1/2 cups of self raising flour
3 x tablespoons of milk
1 x teaspoon of vanilla extract
1/4 teaspoon of ground cinnamon

topping 
Sprinkling of brown sugar
Sprinkling of ground cinnamon
2 x apples, cored, finely sliced and with the skin left on (see pictures below)

  • Preheat the oven to 180℃ and grease and line a round 20cm cake tin.
  • Add all ingredients in to a large bowl of an electric mix master and beat for 3 minutes until the mixture is light in colour and well mixed. (This mixing process is important as the batter becomes airy and helps the cake to rise nicely).
  • Using a spatula, scrape the mixture in to the prepared cake tin and spread it out to the edges.
  • Simply arrange the apple pieces in a circular pattern around the cake (see picture). Add a slice of apple in the middle.
  • Give the cake a nice sprinkling of cinnamon and brown sugar over the top.
  • Bake in the oven for approximately 30 minutes or until a cake skewer comes out clean.
  • Let the cake cool on a wire rack.

Serve warm as is or for an extra indulgence, serve with some double cream.

Lo’s tips

  • You can use any apples that are in season. My favourite for this cake are Pink Ladies.

  1. Love an easy all in together recipe! It’s in the oven baking ready for a birthday morning tea. Had to bake it before my kids awoke or they would have eaten all the cake mix & sliced apples!
