soupe de pois et de laitue | translation : pea + lettuce soup

For as long as I can remember, mum has cooked this. And for as long as my mum can remember, her mum has cooked this.

As a kid, I didn’t like the idea of green soup, nor the look of it. But as an adult, I really have grown to LOVE this dish. It is so comforting on a warm winter’s night or makes for a perfect “meat free Monday” after a busy and overindulgent weekend.

The ingredients are very humble. There is absolutely nothing flash here and the reason I like it is that I always seem to have the ingredients in the cupboard or fridge anyway. It is a great one for those who are looking to tighten their belts too.

pea + lettuce soup

1 cup of frozen peas
1 small iceberg lettuce, roughly chopped
2 x large potatoes, peeled and sliced
A squeeze of fresh lemon juice
1 brown onion, chopped
Half a cup of thickened cream
Salt, white pepper
3 x cups of chicken stock
1 x tablespoon of chopped chives
Crusty bread and butter, for serving

– Saute the onions in a little bit of butter in a large saucepan.
– Add the peas, potatoes, lettuce, chives, stock and salt and pepper.
– Bring to the boil and then back off to a simmer. Simmer for about 15 minutes or until the potatoes are very soft.
– Using a bar mix, wizz it up until smooth. Add the lemon juice and cream to taste.
– Serve with a slice of crusty bread.

My gorgeous Cork Daddy (pictured below) came home with a bar mix the other day. Reckons we need to start giving smoothies a go. Watch this space.

  2. Scrummy! I like freezing it in small portions and adding the cream in after defrosting it. I used sour cream tonight because it’s all I had in the fridge and it was still delicious 😊
