monday morning muffin mania

Monday’s, we cook! After our big weekend away, I haven’t been grocery shopping so we’re cooking muffins today to use up the leftover bits and pieces that we have in the fridge and fruit bowl.

I often make muffins with my girls as they are so easy to make that they can really get stuck in and do it themselves. They are a healthy alternative to store bought biscuits for morning tea and freeze really well. Perfect for the kids lunch boxes!

Zucchini and Apple Muffins

2 cups self raising flour
1/2 cup brown sugar
1 teaspoon cinnamon
2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
3 apples, peeled and grated
1 zucchini, peeled and grated
Optional: extra apple slices and brown sugar for placing on top

  1. Preheat oven to 180°C. Line a 12 cup muffin tin. (I do this by cutting out small squares of baking paper and filling them with mixture.)
  2. In a large mixing bowl – Let the kids mix all ingredients with a wooden spoon, allowing them to add each ingredient as you go. (I add the dry ingredients first, followed by the wet ones).
  3. Spoon mixture in to the lined muffin tins and place the apples on top and sprinkle with some brown sugar.
  4. Bake for about 20 minutes or until lightly golden brown.

Banana and Oat Muffins

1 1/2 cups plain flour
1 cup rolled oats
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla essence
2 large bananas, mashed
Optional: Extra oats and brown sugar for sprinkling on top.
