Funnily enough I got asked today whether or not I had a recipe for a muesli slice, just as I was sitting down to type up the recipe for this very ‘seed-y’ one. Seed-y in the “it has lots of seeds” sense and not because it “tastes like bird food”, thanks Aunty Ali.
It’s a recipe that Mim gave me. And as with all of Mim’s recipes – it just really works. Talk about tried and tested, if you’re looking for a (healthier) treat to enjoy with your mid morning cuppa – then this is for you. Loaded with pumpkin, sunflower and sesame seeds and using good old fashioned cornflakes as the base; the best thing about it is that you can keep it in an air tight container and it will last the whole week.
It’s one of the easiest slices to make. Simply throw all the dry ingredients in to a bowl, heat up some butter and golden syrup and mix them together with a wooden spoon. Give it about 20 minutes in the oven and viola!
And as for the muesli slice Lizzie – I haven’t forgotten, I’m on the hunt for you. My sister Case used to make these beautiful muesli bars, which I remember her wrapping up individually to freeze for school lunches. She texted it through, the heading being “Casey’s Experimental Museli Bars!” They’re loaded with muesli, seeds and coconut and apparently made even better with a drizzle of melted dark chocolate over the top. Now we’re talking.
I’ll give them a test run and get back to you. Seeds and all.
a very ‘seed-y’ slice
1 x cup of self raising flour
1/2 cup of sugar
1/2 cup of pepita seeds (pumpkin seeds)
1/2 cup of sesame seeds
1/2 cup of sunflower seeds
2 x cups of corn flakes
200 grams of butter
2 x heaped tablespoons of golden syrup
- Preheat the oven to 180℃ and grease and line a slice tray.
- Add the flour, sugar, seeds and cornflakes to a large mixing bowl.
- Melt butter and golden syrup in a medium sized saucepan until the butter has melted and it’s combined.
- Simply pour the hot liquid in to the dry ingredients and mix together with a wooden spoon.
- Scrape out in to the prepared tray and bake for 15-20 (depending on how hot your oven is) until just golden on top.
- Leave to cool completely before cutting in to squares.
