mixed berry muffins

Saturday mornings are for throwing some muffins in the oven. They’re so simple to whip up and make the house smell lovely. I cooked these very muffins at the end of last year when we sold our place in Wagga. A real estate agents oldest trick in the book; their advice to sellers is to have fresh flowers in every room and to bake something before the open house so that it smells good. It creates a nice homely atmosphere.

We were lucky that it was a rainy day for our first open home so we had the fire raging, quiet music on in the background and our small little house felt so cosy and warm. I still think it was the freshly baked muffins sitting on the kitchen bench that resulted in someone making an offer that day!

Everyone should have a go-to muffin recipe up their sleeve. Terrific to make for morning tea when friends or family pop over, good for kids school lunch boxes and they freeze really well. Using frozen berries means that you can literally make these all year round too.

Serve them as they are straight from the oven or have them with some yoghurt and fruit for a nice brunch idea.

mixed berry muffins

3 x cups of self raising flour, sifted (I use half regular self raising flour and half wholemeal self raising flour)
1 1/3 cups of castor sugar
2 x eggs
1 x teaspoon of vanilla
150 grams of softened butter
Zest of a lemon
1 1/3 cups of milk
2 x cups of frozen mixed berries

  • Preheat the oven to 180 degrees.
  • In a large mixing bowl, sift the flour and sugar together.
  • Add the eggs, vanilla, butter, lemon zest and milk and mix well using a wooden spoon.
  • Add most of the frozen berries (reserve some for sprinkling on top) and stir through.
  • Line the muffin tin by cutting small squares of baking paper and pushing them in to the holes. Spoon the mixture in on top.
  • Sprinkle extra berries over the top.
  • Bake in the oven for 20 – 25 minutes or until cooked through and nicely browned.

Lo’s tips

  • You can also buy muffin casings from the supermarket I believe. I have always lined my muffin tins with baking paper myself but I’m sure there is an easier way.
  • I soften my butter in the microwave for 20 seconds for this recipe to speed things up.
  • You can substitute the berries with cut up apples instead if you like. I’d use 3 Granny Smith apples very finely chopped. If I was using apples instead, I’d add a little bit of cinnamon.

    The second time I was just about put the mixed berries in and realised I didn’t have any, but then reading your tips I put apple and cinnamon in them! So good.
