I’ve had numerous requests asking what my two little girls, Charlotte and Annabelle (aged 4 and 2) love to eat for dinner. I often discuss food with friends of mine to see what they’re cooking up for their kids. In our household, food is a much loved topic as well. My 4 year old Charlotte loves ‘chicken noodles’ but tells me not to put in too much soy sauce!
A friend told me that her kids enjoy a simple piece of steak with veggies and that she buys the minute steaks which are really quick to cook. My girls loved it and I make these steaks all the time now. Thanks Jules!
Other go-to meals for the kiddies are ‘pasta and meat’ AKA spaghetti bolognese, zucchini slice, sausages with mash and veggies, fried rice and creamy bacon pasta. I keep Jamie Oliver’s fish fingers as well as frozen peas in the freezer for nights when you need something quick. Tinned corn is good to have in the cupboard for some extra vege and if all else fails – some tinned tuna on a piece of bread always does the trick. Maggi also make a wholegrain kind of two minute noodles which are good to have in the pantry for a cheat meal on those days where cooking is the last thing that you feel like doing.
I always have carrots, corn and broccoli in the fridge and throw them in my steamer most nights. Charlotte likes cut up red capsicum sticks and Annabelle loves cucumber. Dessert options are mainly yoghurt, which Charlotte calls ‘Meemar yoghurt’ as every time we visit, she has it in the fridge for us. My girls are big fruit eaters too which they’ve definitely got from my side of the family. Never underestimate the power that a scoop of ice cream with some milo sprinkled on top has either!
This chicken noodle recipe is really easy to make and the girls would have it once a fortnight at least. You can make a larger batch so that the whole family can eat this for dinner together and it’s really versatile, meaning that you can add any veggies that your kids will eat or that you have in the fridge.
We would all love for our kids to eat absolutely everything on the plate, every time we serve something up to them. In a perfect world, that would happen but I try not to worry too much. As kids, we were brought up on simple food such as jatz biscuits, water, fruit and plain toast. I think I’ve turned out alright.
I really hope your kiddies like this meal as much as my girls do. I have my fingers crossed for you that it actually gets eaten. And if all else fails, a bit of ice cream bribery never hurt anyone.
hokkien noodles w chicken + broccoli + carrots (serves 2 hungry toddlers w a little leftover)
1 x chicken breast, sliced in to small pieces
1/2 a brown onion, finely diced
1 x garlic clove, crushed
220 grams of Hokkien noodles
1/4 head of broccoli, cut in to small florets
1 x small carrot, peeled and chopped in to small rings
1 tablespoon of soy sauce
1 tablespoon of honey
Olive oil, for frying the chicken
- In a non stick fry pan, heat a splash of olive oil and brown the chicken pieces on both sides. Reserve on a clean plate.
- In the same fry pan, add the onion and garlic and fry for a couple of minutes until they have softened.
- Add the carrots, broccoli and a splash of water to the fry pan that has the onions and garlic in it. Stir fry these veggies for about 5 minutes or until they have become slightly soft and cooked to your liking.
- Add the cooked chicken, noodles, honey and soy sauce and stir fry for a few more minutes until heated through.
- If you are making this for the kids AND for yourself than you can always serve the noodles with either some sweet chilli sauce or chilli sauce to give it a bit of extra flavour.
- I often make a double batch of this and Cork Daddy and I will eat it too for dinner or I’ll throw some in the fridge for dinner the next night, or in the freezer.
- Obviously you can add any types of veggies that your kids like. Substitute the carrot and broccoli for: corn, zucchini, snow peas, cauliflower, red or green capsicum, baby spinach or frozen peas.
- You could also add some oyster sauce for a bit more flavour.
