How good is Bircher museli!? If you haven’t had it before, you should have a crack at making your own. It’s so easy and the perfect solution to get you out of that breakie rut I often find myself in.
Bircher is great for a kids party on a Saturday morning or to have in the fridge for those weekends when you have friends or family staying. Why don’t you offer to take it to your in-laws place for the long weekend for Easter Sunday breakfast? Not a bad idea to mix it up a bit and have something to eat other than chocolate.
I made a huge batch of this muesli for my sister-in-laws wedding recovery to feed the masses. It went down really well as the hand around starter while everyone waited for the barbie to fire up. It was almost as good as the bacon and egg rolls. Almost.
Get creative. You can add any nuts, dried fruit or other bits and pieces that tickle your fancy; such as chia seeds, quinoa flakes or rice puffs. You can also serve it with stewed fruit, tinned peaches, frozen berries or any fresh fruit that is in season.
Lo’s bircher museli (this makes a lot!)
300 grams of rolled oats
100 grams of bran straws
1/4 cup of sultanas
1/4 cup of flaked almonds
3 apples, grated (leave the skin on)
1 cup of apple juice
2 tablespoons of honey
Juice of 1 lemon
150 grams of natural yoghurt
150 grams of vanilla yoghurt
Raspberry coulis, to serve
Fresh strawberries, to serve
A mixture of natural yoghurt and vanilla yoghurt, to serve
Honey, to serve
- In a large mixing bowl; combine the oats, bran straws, sultanas and flaked almonds.
- Add the honey, grated apple, apple juice, lemon juice and natural yoghurt and mix well to combine. (Add more yoghurt or apple juice if it isn’t “wet” enough.
- Refridgerate overnight or until needed.
Serve with fresh strawberries, raspberry coulis, yoghurt and a drizzle of honey.
- In a small saucepan, heat some frozen raspberries with a sprinkling of castor sugar and a squeeze of lemon. Simmer over a medium heat, stirring, until the raspberries have defrosted and the mixture becomes syrupy. After about 5-10 minutes, this should be ready. Pour the raspberries through a fine sieve, using a wooden spoon to scrape the raspberries around so that they push through the sieve more quickly.
- For an easier version, simply buy some Bircher museli in a box. Carman’s and Lowan’s do a great version. Then, all you need to do is mix it with the yoghurt and apple and viola!
- Depending on who you are making this for, use a combination of natural yoghurt and vanilla yoghurt. I don’t have a real sweet tooth so I prefer the natural yoghurt, but my kids prefer something a little sweeter.
- It keeps for as long as the yoghurt does, in the fridge.

Press it all down, throw some glad wrap over the top and place in the fridge overnight or until needed.
Served below with some of Mum’s stewed blood plums. Yum.
Serve in little glass jars or plastic cups at parties.
