
Monday’s, we cook! After our big weekend away, I haven’t been grocery shopping so we’re cooking muffins today to use up the leftover bits and pieces that we have in the fridge and fruit bowl.
I often make muffins with my girls as they are so easy to make that they can really get stuck in and do it themselves. They are a healthy alternative to store bought biscuits for morning tea and freeze really well. Perfect for the kids lunch boxes!
Zucchini and Apple Muffins
2 cups self raising flour
1/2 cup brown sugar
1 teaspoon cinnamon
2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
3 apples, peeled and grated
1 zucchini, peeled and grated
Optional: extra apple slices and brown sugar for placing on top
- Preheat oven to 180°C. Line a 12 cup muffin tin. (I do this by cutting out small squares of baking paper and filling them with mixture.)
- In a large mixing bowl – Let the kids mix all ingredients with a wooden spoon, allowing them to add each ingredient as you go. (I add the dry ingredients first, followed by the wet ones).
- Spoon mixture in to the lined muffin tins and place the apples on top and sprinkle with some brown sugar.
- Bake for about 20 minutes or until lightly golden brown.
Banana and Oat Muffins
1 1/2 cups plain flour
1 cup rolled oats
1/2 cup white sugar
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla essence
2 large bananas, mashed
Optional: Extra oats and brown sugar for sprinkling on top.
