best ever banana bread

I first published this recipe back in February 2018 when Charlotte and Annabelle were only babies (you’ll find the original post below). Fast forward to October 2021 and many things have changed. Our family has grown, with Primrose and Harriet being born and we’ve moved from Wagga to Boorowa. And after all of this change (all of it good I might add), the one thing that hasn’t changed is this banana bread recipe.

It’s so good in fact I’m actually selling it every Friday and Saturday at the Boorowa IGA. Needless to say I don’t need to refer to the recipe anymore. I could make it in my sleep.

Having two small girls, I can say that we’ve definitely had our fair share of babycino’s and banana bread in many a cafe in town. This recipe is great to create at home and is the easiest and the nicest banana bread I’ve tasted. Make this, wrap it up in some kitchen paper and string and take it over for morning tea at your friends place. You will eat the whole thing in one sitting it’s so good!

A weekly staple in our house. The girls love making it. It’s so easy to throw together.

best ever banana bread

3 very ripe mashed bananas, plus an extra one to decorate the top (I throw any really ripe bananas in the freezer from the fruit bowl so I always have them on hand)
1 1/2 cups plain flour
1 teaspoon baking powder
1 teaspoon bi-carb soda
1/4 teaspoon salt
3/4 cup of sugar
125 gms softened butter (throw it in the microwave to soften)
2 eggs
1 teaspoon vanilla extract
1/4 cup of milk
Squeeze of lemon juice
Berries and natural yoghurt to serve, or simply serve warm or toasted with some butter

  • Preheat oven to 165℃. Grease a rectangular loaf tin and line with baking paper so it doesn’t stick.
  • I then throw all ingredients in to a large mixing bowl and let the girls mix, mix, mix with their wooden spoons.
  • Pour in to the tin and arrange the sliced banana pieces on top.
  • Bake for approximately 50 – 60 minutes or until a skewer comes out clean.

  4. Wow. Banana bread has long been an easy go to recipe for me but today was the first time I used this recipe. It’s amazing!! I didnt have enough bananas to put them on top but did mix through a small handful of rasberries and grated some fresh nutmeg on top. It was gone very quickly!

  6. Lo I was inspired to make this after seeing all your delicious looking posts about it on Instagram! Couldn’t find my loaf tin so used a 20cm square one, baked it for 40 mins and turned out perfectly and it was absolutely delicious! Best banana bread ever and so easy to put together- thank you!

  7. This week I have made 5 of your lovely banana bread loaves. Intending to freeze for harvest but they haven’t made it past the family and friends! The last one I used Coles brand gluten free plain flour as I am a coeliac. Put banana and blueberries on top. It turned out perfectly, the only difference with the gluten free loaf was the banana bits and blueberries sank down to the middle of the loaf and were a nice surprise. They stayed on top with regular plain flour. Thanks again for the recipes Lo, can’t wait for your cookbook.

    1. Thanks Chris for the comment. 🥰 How funny that they never made the freezer. 😂 I’m making lots of banana bread here lately (selling it at the Boorowa IGA on the weekends). Probably why I’m yet to publish this cookbook!! 😂😂😘😘
