best ever banana bread

Having two small girls, I can say that we’ve definitely had our fair share of babycino’s and banana bread in many a cafe in town. This recipe is great to create at home and is the easiest and the nicest banana bread I’ve tasted. Make this, wrap it up in some kitchen paper and string and take it over for morning tea at your friends place. You will eat the whole thing in one sitting it’s so good!

A weekly staple in our house. The girls love making it. It’s so easy to throw together.

best ever banana bread

3 very ripe mashed bananas, plus an extra one to decorate the top (I throw any really ripe bananas in the freezer from the fruit bowl so I always have them on hand)
1 1/2 cups plain flour
1 teaspoon baking powder
1 teaspoon bi-carb soda
1/4 teaspoon salt
3/4 cup of sugar
125 gms softened butter (throw it in the microwave to soften)
2 eggs
1 teaspoon vanilla extract
1/4 cup of milk
Squeeze of lemon juice
Berries and natural yoghurt to serve, or simply serve warm or toasted with some butter

  • Preheat oven to 165℃. Grease a rectangular loaf tin and line with baking paper so it doesn’t stick.
  • I then throw all ingredients in to a large mixing bowl and let the girls mix, mix, mix with their wooden spoons.
  • Pour in to the tin and arrange the sliced banana pieces on top.
  • Bake for approximately 50 – 60 minutes or until a skewer comes out clean.

  4. Wow. Banana bread has long been an easy go to recipe for me but today was the first time I used this recipe. It’s amazing!! I didnt have enough bananas to put them on top but did mix through a small handful of rasberries and grated some fresh nutmeg on top. It was gone very quickly!
